For Air Canada, top Canadian chef David Hawksworth is creating a selection of seasonal starters, main courses and desserts which perfectly enhance the selection of typically Canadian food currently available on international routes in Business Class.

On most flights from Canada, Air Canada will serve you a welcome cocktail after departure. Then you will be treated to a starter created by award-winning chef David Hawksworth such as poached, chilled prawns with fennel, orange, marinated onions, horseradish and celery purée in breadcrumbs.
Main courses include fillet of Alberta beef with truffle and porcini sauce, potato gratin, baby carrots and green beans, or baked black cod with chorizo, San Marzano tomatoes, fennel, crunchy chick peas and fines herbes, created by David Hawksworth.
The menu is rounded off with a selection of cheeses and a glass of port, as well as seasonal fruits or dark chocolate fondant.
